Inside-Out Chocolate Covered Strawberry Cupcakes

Happy Valentine's Day!  Here's a fun recipe that is super easy and delicious!


Inside-Out Chocolate Covered Strawberry Cupcakes
Box of Strawberry Cake Mix (and its associated ingredients)
6-8 juicy strawberries
Chocolate Chips for Mini Cupcakes or Hersey Kisses for Regular Cupcakes
Tub of Strawberry Icing (or Chocolate)
Sprinkles

Chop up the strawberries.   Then mash in a strainer to get as much juice as possible.  This will be added to the cake mix instead of water.  Follow the directions on the box, but mine called for 1 cup.  I got just over 1/2 cup of pure juice.  Then I ran water through the strainer to get diluted strawberry juice to make up the rest of my cup.  Then chop up the strawberry mush so that it will distribute evenly into the cake batter.

Mix together the strawberry juice, strawberry mush, cake mix and anything else that is called for on the box (eggs, oil, etc.).   Fill the cupcake tins with 2/3 batter.  Then place 3 chocolate chips for mini cupcakes or 1 kiss for regular cupcakes in the batter.  Try to cover it up with the batter as best you can.

Bake according to the directions on the box.  I have found that mini cupcakes bake at 350 for 8 minutes since no box seems to give you times for those!  Then frost, sprinkle and add some chocolate if you'd like.  Enjoy!
